'Les Hauts & Les Bas' Chinon. Literally translating to 'the highs and lows', it is a blend of their various terroirs. Most of the fruit comes from the alluvial soils close to the Vienne River while about twenty-five percent comes from clay and flint-rich soils on the plateau of Cravant. Cabernet Franc planted on gravel tends to yield riper fruit while the flinty clay brings minerality and tension. Half of the cuvée is aged for six months in cement while the other half is in old barrels. It is bottled in September just before the following harvest.
