Sonoro Sauvignon Blanc pleases the senses in the most delightful and palpable way. While a light-bodied Sauvignon Blanc, Sonoro's freshness and lingering minerality provide a perfected structure and balance that you will not find in most Sauvignon Blancs. On the nose, an intense aroma of citrus fruits, such as grapefruit and white peach are contrasted with exotic spices, like mint, thyme, rosemary and marjoram. This is a truly unique wine that will please all palates. Sonoro Sauvignon Blanc lends itself well to dishes with fresh herbs and greens, such as fennel, spinach, watercress, arugula, and most green leaf salad vegetables. The most ideal pairing for this wine is seafood, shellfish and sushi; but this structured and well-balanced wine also allows one to be creative with exotic spices, and even chili pastes and curry-based recipes.
Chloe ProseccoSourced from the Prosecco DOC, amongst the villages of Conegliano, Valdobbiadene, and Asolo, Chloe Prosecco defines the elegant sparkling style for which this captivating area is known. This wine is bursting with fresh fruit and fine bubbles, with notes of peach, green apple, citrus and white flowers on the nose and palate. It is light straw yellow in color with greenish hues. Opulent yet balanced with elegant acidity, this wine offers a crisp finish with a hint of minerality, revealing the proximity to the mountains and calcareous soils where the grapes are grown.
Finca la Estacada Tinto Velasco Ocho Y Medio 2015An exciting rarity, a formerly popular regional grape variety-of which now only 50 hectares planted in the world! A long growing period requires the grapes to stay on the vine until late October or November. No herbicides or pesticides are employed here, but Todd uses algae from the Spanish coast as natural protection from insects. Fermentation is spontaneous, and sulfur (at bottling) is extremely low. The resulting wine is delicious: savory and juicy with a similar berryish tang as the Malbec but more earth tones and lingering flavors.
