Georgetta cold soaked the whole berries for 4 days, fermented at cool temperatures to retain the fruit and pressed gently at dryness. The wine was aged in French Oak.
Cooper & Thief Cellarmasters Red Wine Blend 2014Cooper & Thief is a dark and jammy red blend loaded with bourbon-inspired flavors and aromas. Aging for three months in ex-bourbon barrels gives way to soft velvety tannins, with a subtle heat. The combined result is a rich flavor with a long, lingering finish. Vintage: The 2014 vintage came in early with loose clusters, small berries and intense ripe flavors. The warm summer resulted in even ripening and allowed the seeds to mature in step with the sugar development. The resulting wine showed excellent balance with soft, approachable tannin levels.

Domaine LaFage Côté Est 2014Jean-Marc and Eliane Lafage farm 160 hectares of vines located just south of the capital of French Catalonia, Perpignan. Some of their vineyards are situated a few kilometers from the Mediterranean while others can be found in the foothills of the Pyrenees. This range of sites allow them to make both refreshing whites as well as concentrated reds and, this being the Roussillon, some fortified wines as well. Benefiting from a warm, dry climate, the estate is farmed organically. They grow primarily Grenache (Blanc, Gris & Noir), Syrah, Mourvedre, Carignan, Marsanne, Roussanne and Chardonnay with a significant proportion of the vines well over 50 years old. The soil, as you near the coast is weathered, alluvial gravel while in the higher elevation sites it is predominantly schist. They harvest by hand and the winemaking is surprisingly uncomplicated with stainlesss steel for the fresher whites but mostly concrete tanks for the rest with a small amount of French oak demi-muids.

Fronton de Oro Tinto Tradicional 2014The 2014 tinto is made from owned Listán Negro grapes raised for three months in mostly used American oak barrels. (About one of 8 barrels is new.) The grapes are totally de-stemmed and cold soaked for 24 hours before pressing. Vinification takes places in stainless steel tanks and then the wines are moved to the barrels. Total production is less than 4,000 cases.

Julien Braud Forty Ounce Muscadet 2016 1LThis cuvée comes primarily from terroirs seated on gneiss rock, which gives wines its fruitiness early on. A small part also comes from Amphibolite (type of rocks), which contributes a citrus and fresh mouthfeel. The vines are 30 years old on average.

Our Belgian brewer's yeast further enhances flavor development, creating fruity esters during fermentation. Domaine du Possible Charivari 2013Carignan from multiple parcels ranging from 30 to 106 years old. The wines are meant to be fresh, bright and easy-to-drink; extraction and alcohol remain low, instead the focus is on fruit, minerality and acidity. Most of the wines are initially foot-trodden, then whole clusters are added, resulting in a spontaneous, semi-carbonic maceration. Charivari is 100% carbonic, while Couma àco is aged in concrete and sees a later release. Sulfur additions, if any, are decided each vintage, wine by wine.
